Ingredients
1 roll of pure butter puff pastry (homemade or supermarket)
8 apricots
30 g almond powder
30 g brown sugar
40 g butter
some mint leaves (optional)
Preparation
Start this recipe for apricot puff pastry squares by preheating the oven to 180°C.
Cut 8 squares from the puff pastry. Sprinkle some almond powder over the squares until the bottom is covered.
Wash and quarter the apricots. Arrange the apricots in the center of each square. Drizzle with a little honey and add a knob of butter.
Whisk the egg and brown the edges of each puff pastry square, then sprinkle with brown sugar.
Bake in the oven for 25 min or until golden. Decorate with some mint leaves.
