Ingredients
• 30 cookies
• 250 g oatmeal
• 100 g of whole wheat flour
• 1/2 tsp of baking soda
• 2 tbsp of pumpkin seeds
• 2 tbsp of dried lavender flowers
• 100 g butter, room temperature
• 50 g of brown sugar
• 50 g of caster sugar
• 1 egg
Preparation Preheat the oven to 180 ° C. Combine all the dry ingredients in a bowl. Put the butter with the sugars in another bowl and add the egg. Whisk everything vigorously. Stir the dry ingredients into the egg mixture. Knead well till you get a crumbly mixture. Line a baking tray with baking paper (two if you want to bake around 30 cookies at the same time). You can also freeze the second half for later. Take a tablespoon of dough per cookie and shape a ball with your hands. Arrange the balls on the baking sheet making sure to space them well apart.
Flatten each cookie by pressing down on it with the palm of your hand. Bake the cookies for ten minutes at 180 ° C. They should be nicely browned. Take them out of the oven and let them cool on a serving platter.
